Red Velvet & Cream Cheese Frosting Valentine’s Cupcakes
Valentine’s is only a couple of days away now, and whatever you may be doing to celebrate, I have a special treat you can whip up in no time, for yourself or someone special – simple, beautiful, Valentine’s cupcakes.
You guys may have noticed a theme throughout my latest baking posts – I am a special occasion baker. I love to whip something together with the purpose of gifting, and these gorgeous red velvet and cream cheese frosting cupcakes are no exception.
Today I am partnering with my favourite baking brand – Betty Crocker – to share my top lazy-girl recipe so far, I put these red velvet cupcakes through the taste test (naturally) and, bias aside, they are delicious! Plus, with the addition of a little dressing at the end, they look super fancy, and will make an awesome Valentine’s Day gift.
Ingredients & Tools
3 x Medium size eggs
7 tbsp Vegetable Oil
200 ml Water
Handful of fresh strawberries
Cupcake baking tray
Method – For the cakes
This is the bit I love – it couldn’t be easier!
– Mix the Red Velvet Cake Mixture together with the eggs, oil and water and mix until smooth.
– Distribute the cake mixture evenly in to your cupcake cases, I used about a tablespoon and a half for each cupcake.
– Pop them in the oven for 17 minutes (I’ve found this to be the optimum time) and leave out to cool for half an hour before decorating.
For the decoration
This time I decided to get serious with my cake decor, and borrowed an icing pipe from Oli’s Mum. This made all the difference when achieving that lovely neat(ish in my case!) icing swirl on top of the cupcakes.
I found that piping in a ‘@‘ motion allowed me to create the best swirl, and also provided a steady base for the cupcake toppers . . .
After researching on Pinterest, I decided that a simple strawberry topper looked super pretty. I halved the strawberries and pushed them slightly in to the cream cheese frosting to make sure they were secure.
I used a strong white box to hold the cupcakes, and wrote a little ‘guess who’ note to go with them . . . !
The finishing touches make all the difference, if you’re planning on gifting your cupcakes, make sure to go the extra mile and think about how they are going to look to the receiver. I like the idea of a little gift bag too with perhaps only two cupcakes inside – one for you, and one for someone special?!
