Turning up to a gathering, especially when you will be meeting new people, it is always a nice gesture to bring a small gift, even better – something delicious and home baked.
Next year one of my best friends, Georgie, is getting married. I was so honoured when Georgie asked me to be one of her bridesmaids, and I am so excited to get to know the other three lovely girls who are also bridesmaids for Georgie’s big day.
In anticipation of the wedding in June next year, Georgie, myself and the other three bridesmaids are all meeting regularly to plan critical elements of the wedding (ahem, hen do).
What to bring to our bridesmaid meetups? Cake, ofc.
Georgie’s favourite cake is ginger, and so I couldn’t believe my luck when I found out that a new Betty Crocker Ginger Cake recipe was out. I’m a pretty lazy cook, so this pleased me immensely.
Betty Crocker baking mixtures are my guilty secret. I’ve used them for years, and today I thought I’d share the Spiced Ginger Cake Mix I whipped together for Georgie this past weekend, along with help from my little sister Marietta.
Baking + Saturday + sister time = weekend bliss!
In case you’ve never used a Betty Crocker cake mix before, let me walk you through the deliciousness . . .
. BETTY CROCKER SPICED GINGER CAKE MIX .
Betty Crocker mixtures are pre-assembled ingredients for making delicious cakes and cookies.
In order to complete a recipe you need only to add a few ingredients – eggs, water and oil normally.
For the Spiced Ginger Cake Mix you simply add three eggs, a little oil, and a little water. It’s that easy.
30 mins in the oven . . . ????! One freshly baked spiced ginger cake . . . !
For icing a Betty Crocker Cake, there are pre-mixed (of course!) tubs of Betty Crocker Frosting, I used the Rich & Creamy Cream Cheese Style Icing.
I like to add a little personal flourish to my cakes, even if I did use a pre-mixed recipe ☺️ – for the Ginger Cake I grated a sprinkling of orange rind, and finished with cinnamon sticks and a couple of complimentary-coloured rose petals.

Georgie and her boyfriend James actually ended up coming round to ours before I got a chance to take the cake to the bridesmaid gathering!
We ALL ended up with a slice of cake and chai tea for a Sunday catchup instead. It felt like it still worked out pretty perfectly, and given that the cake mixture is just about the easiest thing to use ever, it won’t take much to whip up another cake when we do get down to bridesmaid duties . . . !
