My Favourite Gluten Free
Banana Pancake Recipe
For the second in my series of ‘brunch foods Monica really loves to cook, eat and repeat’ (did you catch my favourite smoothie bowl?!) I’m sharing my very favourite gluten free banana pancake recipes which is ALL kinds of delicious.
This recipe is amazing for sassy-ing up a weekday morning, but I personally love to make them alongside a big fresh cafetiere of coffee over the weekend.
Dig out your magazines/blogs of choice, get that coffee brewing and let’s talk banana pancakes!
These are not pancakes with ‘bananas on top’.
They’re so much more.
Given, the title of ‘banana pancakes’ is a little confusing.
If you’re envisaging a stack of fluffy pancakes topped with chopped banana and chocolate sauce (um, Y U M), then friend, bookmark this recipe for when you want something equally delicious but a little less decadent.
This recipe, using banana and eggs as the batter, is completely gluten free and ALL kinds of delicious.
I’m repeating myself, but a brunch this good will do that kind of thing to you.
This could not be a more simple recipe. And when I first heard it, I didn’t think that this would genuinely make a delicious batch of pancakes.
Oh but it does.
Serves: 1 person comfortably. Double the ingredients for two people.
2 regular sized eggs
A heaped tea spoon of baking soda
A sprinkle of cinnamon
Coconut oil for lining your frying pan
Your choice of toppings
Heat up a little coconut oil in a frying pan ready for your pancake batter
Mix your banana, eggs, baking soda and cinnamon up in a food processor or blender. I use a NutriBullet and it takes seconds.
Once your oil is hot, pour about a quarter of your batter into the frying pan as you would do with any pancake batter.
Flip once the underside browns.
Pop onto a pretty plate and cover loosely with a tea towel or silver foil to keep it warm while you make your other pancakes.
Repeat until you run out of batter. This recipe comfortably makes 3/4 pancakes.
I love to add berries, a little maple syrup, more cinnamon and chopped almonds to my pancakes.
SO delicious, and much lighter than traditional pancakes.
