Happy Monday you lovely lot! I hope you guys had a great weekend. Regular readers may have noticed I took a mini hiatus at the end of last week, and Miss, here’s the reason why…
Whilst Christmas was a super fun and festive affair, I spent much of it working with my Mum in our family B&B. Yes friends, I was leading a double blogger/B&B life. Spending time with my Mum was ace, and I treasure the times we were both working our arses off and sneaking mince pies between room changes (that happened a lot), but the flip side is that our Christmas chill time came a little later than most. It’s fair to say that by the end of last week I was tired, in need of recharging, and as my little Sister was headed back to Uni over the weekend, family time took priority. Four days of R&R has kicked me straight back in to gear and I am super excited to share with you one of the healthy snacks I’ve been loving since January rolled on round and everyone’s favourite resolution – the health kick – stepped in.
As I mentioned last week, I’m not one for opting out on meal time, so this super fresh and healthy green juice is an ideal snack. I’ve been using Joe Cross’s Mean Green Juice recipe with my Kenwood Smoothie 2 Go blender (yes that £29.99 dream machine) – and hey, so far so good. I’ve been curbing my elevenses snack cravings with a glass of this, and have definitely noticed a more even energy level.
Read on for the full recipe, as found on Joe’s website, and some tweaks I found worked for me.
4 celery stalks
6-8 kale leaves (I substituted in spinach)
1 tbsp ginger
Wash all ingredients
Pop in a juicer/blender
Pour & Enjoy
Notes on Joe’s Mean Green Juice recipe: I halved all the ingredient amounts as my blender couldn’t fit the lot in. I also substituted kale with spinach. The lemon came through as a stronger flavour than I expected so I ended up using a little less than recommended and popped more ginger in, but I think this is a personal preference. I also chopped up my ingredients into chunks as they blended more easily.
